  • 6 navel oranges
  • 1 small red onion
  • 1/4 cup fresh basil
  • 3 tablespoons red wine or balsamic vinegar

  1. Zest the skin of one orange, using a zester or microplane. If using a zester, chop into fine pieces.
  2. Peel oranges and divide into sections. Divide each section in half with a knife.
  3. Remove the skin from the onion, halve and cut into thin slices.

  5. Combine oranges, zest, onion and basil in a large bowl and drizzle with the vinegar. Toss to coat, and taste. You may wish to add an additional tablespoon of vinegar, depending on your taste preference.

  7. Immediately portion into chilled serving bowls and enjoy.
