Recipe: Italian Spaghetti with Eggplants and Tomato

Summary: This is a traditional Sicilian recipe also called “Pasta alla Norma”.
Ingredients
- 3 Eggplants
- 1 Piece of Garlic
- Pepper
- Salt
- Olive Oil
- Tomato sauce
- Pasta (spaghetti) 400 gr.
Instructions
- Cut the eggplants into slices and put them in salted water for 30 minutes
- Fry the eggplants with olive oil
- Prepare the tomato sauce
- Put in a pan the tomato sauce with a clove of garlic, parsley, salt and peppers
- Cook for about 20 minutes on low flame
- Pasta – Boil water, add salt and put pasta
- Wait until pasta is ready
- Mix pasta with tomato sauce
- Bend Spaghetti with Eggplants
- Put in the oven at 180°c and cook for about 15 minutes
- Put the rolls on a plate and serve hot
