Summary: This is a traditional Sicilian recipe also called “Pasta alla Norma”.


  • 3 Eggplants
  • 1 Piece of Garlic
  • Pepper
  • Salt
  • Olive Oil
  • Tomato sauce
  • Pasta (spaghetti) 400 gr.


  1. Cut the eggplants into slices and put them in salted water for 30 minutes
  2. Fry the eggplants with olive oil
  3. Prepare the tomato sauce
  4. Put in a pan the tomato sauce with a clove of garlic, parsley, salt and peppers
  5. Cook for about 20 minutes on low flame
  6. Pasta – Boil water, add salt and put pasta
  7. Wait until pasta is ready
  8. Mix pasta with tomato sauce
  9. Bend Spaghetti with Eggplants
  10. Put in the oven at 180°c and cook for about 15 minutes
  11. Put the rolls on a plate and serve hot
