Mediterranean Style Veggie Burger

Recipe: Quick and Easy Mediterranean Veggie Burgers

Summary: A thick, juicy burger does not need to be made from ground beef to be delicious. As more and more people reduce their intake of meat, or skip meat entirely, chefs are developing amazing vegetarian recipes like the one that follows. In this recipe, a Portobello mushroom takes the place of the ground beef, creating a veggie burger that’s packed with big flavor and healthy ingredients.


  • 4 garlic cloves (minced)
  • 3-4 tablespoons olive oil
  • 8 large Portobello mushrooms
  • 8 slices reduced fat Provolone cheese
  • 8 crusty rolls (split)
  • 2/3 cup basil pesto
  • 3 cups arugula
  • 2/3 cup sun-dried tomatoes in olive oil (drained and chopped)
  • 1/4 cup sliced black olives (optional)
  • Salt and pepper (optional)


  1. Preheat your grill to medium-high. Mix the oil and garlic in a bowl, and brush the mixture on the mushrooms. Season the mushrooms with salt and pepper. Grill the mushrooms for about 5-7 minutes stalk side down or until they are tender.
  2. Flip the Portobellos over and top with Provolone cheese. Cook covered for about 3 minutes or until the cheese has melted. Remove from the grill. Cut the rolls in half and grill cut sides for a minute or two to brown.
  3. Assemble your veggie burger by spreading pesto on the bottom of the roll. Top with arugula, sun-dried tomatoes and olive slices.

Quick notes

Skip the cheese and use hearty whole grain bread if you want an even healthier burger. Switch out the arugula for baby spinach or leaf lettuce, and top with a slice of red onion if you wish. Salt and pepper are optional.
