Summary: Mediterranean grilled chicken kebabs are a healthy, flavorful protein that is perfect for a summer barbecue. It contains all of the flavors of the Mediterranean, thus invoking a summer taste. Serve it with a salad or vegetable kebabs for a full meal.


  • 1 c. fresh orange juice
  • 2 1/2 tbsps balsamic vinegar
  • 2 tbsps fresh lemon juice
  • 2 tbsps pomegranate molasses
  • 2 tsps grated orange rind (grated)
  • 2 tsps fresh rosemary (minced)
  • 1 tsp salt
  • 1 tsp brown sugar
  • 1/2 tsp cumin (ground)
  • 1/2 tsp black pepper (ground)
  • 1/4 tsp red pepper (ground)
  • 4 garlic cloves (minced)
  • 1/4 cup extra virgin olive oil
  • 2 lbs boneless chicken thighs, remove skin and cut into 1-inch cubes
  • 2 oranges
  • 1/4 tsp salt
  • 1/4 tsp black pepper (fresh ground)
  • Cooking spray
  • 1/4 cup chopped fresh mint


  1. Make the dressing by combining the orange juice, balsamic vinegar, lemon juice, molasses, orange rind, rosemary, salt, brown sugar, cumin, pepper and garlic in a mixing bowl. Slowly stir in the olive oil.
  2. Mix 1/2 cup pomegranate and orange dressing with the chicken in a large plastic zipper bag. Marinate the chicken under refrigeration for 30 minutes.
  3. Preheat grill on medium-high.
  4. Cut oranges into 8 wedges and each wedge in threes.
  5. Remove the chicken from marinade, throw away the marinade in the bag. Alternate chicken and orange pieces on 16 skewers. Sprinkle them with salt and pepper. Spray the cooking surface of the grill with cooking spray and evenly distribute the kebabs on it. Cook for roughly ten minutes, turning halfway through. Baste with the dressing leftover from preparations throughout the cooking process. When they chicken is cooked thoroughly, remove it from the grill and sprinkle it with the mint.
